Beef Cabbage Soup Recipe
Try this basic beef cabbage soup recipe.

1 lb. ground beef
1 onion
salt and pepper
1/2 head cabbage, shredded
2 carrots, shredded
1 Cup rice, cooked
parsley, Italian seasoning or oregano, seasoning of your choice
3 Cups tomato juice
3 Cups water
In large soup pot, saute beef and onion. Season with salt and pepper.
Drain and add back to pot. Add in cabbage, carrots, tomato juice and
water. Season with your choice of seasoning. Allow to simmer on
medium-low. When vegetables are tender stir in rice and heat 5-10
minutes. Taste and adjust seasonings, if needed.

Kale Soup or Caldo Verde
Traditional Portuguese Soup

(Johannesburg, South Africa) This soup is a traditional Portuguese soup that my Gran often makes,
and I enjoy it so much that is why it is my favourite soup.
Here is the recipe:
1 kg sliced potatoes
20-25 ml olive oil
2 sliced onions
6-8 kale leaves or
1 clove garlic
1 head of sliced cabbage
1.5 litres water
spicy Portuguese sausage(chouriso)
salt to taste
Boil onions, potatoes, garlic in the water. When the potatoes are
almost cooked, add salt and olive oil. Mash everything. Return it to
the saucepan and add a little more water and bring to the boil.
Roll 2-3 cabbage leaves tightly together, and cut it into thin slices.
Add cabbage to boiling soup, cook for 5-10 minutes. Leaves should
remain crisp.
Just before the soup is ready, slice the Portuguese spicy sausage and
place them into the pot. It gives the soup an interesting flavour.
Serve the soup with slices of mealie bread (broa - portuguese bread) or
any bread of your choice.
Serves 4-6.
