6 jumbo (chilled) hard boiled eggs diced (white only)
1 large avocado, peeled & chopped into 1/2" pieces
1/4 cup diced celery
1 Granny Smith apple, diced into 1/4" pieces
2 tablespoons plain yogurt
1 teaspoon honey
1 tablespoon finely chopped fresh mint leaves
2 teaspoons freshly squeezed lemon juice
1/2 teaspoon sea salt
1 pinch ground paprika
butter lettuce for serving
In a large bowl, gently toss all ingredients (except lettuce) until well combined. Wash and dry 4 bowl-shaped portions of the butter lettuce. Divide salad into 4 equal portions and serve in lettuce bowls on plates.
