Ideas to fill your freezer


  1. Make homemade apple pie filling and freeze in 2 cup portions. Or slice apples. Flash freeze during apple season and you can easily make apple pie throughout the winter.


  2. Homemade salsa. Buy tomatoes in bulk or if you grow your own you will have many tomatoes ready to harvest. Make homemade salsa and freeze in small plastic containers. Salsa can be used for dipping or added to recipes.


  3. Freezer jams in any flavor. Jam isn’t just for peanut butter and jelly. Apricot jam can be added to pork chops or whole ham for a quick crockpot meal.


  4. Barbecue sauce. You can buy the bottled kind but if you enjoy the fresh flavor of your own barbecue sauce freeze them in smaller portions. Add chicken breasts to the barbecue sauce and you have an easy freezer meal. See homemade barbecue sauce recipe below.


  5. Homemade Applesauce is great for adding in homemade muffins or cakes. As well as baked with pork chops.


  6. Homemade pesto. Whether you grow your own basil or buy it in bulk, make homemade pesto. Pull out a container of pesto and all you need to do to finish the meal is boil needles.


  7. Herb butter cut in squares. Allow a butter cube or stick to soften. Blend in Italian herbs or parsley and shape into squares. Flash freeze and store in a freezer bag. Use in making homemade sauces, browning chicken or vegetables.


  8. If you buy fresh herbs in bulk but can't use it all before its prime, freeze them. Chopped herbs such as basil, parsley, chives, or any herb you use often make great freezer condiments. Place chopped herbs in an ice cube tray about ½ full. Pour boiling water in each hole. (boiling water keeps the herbs color and fresher). Freeze. Pop out of ice cube trays and add to bag. Add an ice cube or two in soups, sauces or wherever you use fresh herbs.


  9. Do this same idea above with minced garlic but add oil instead of water to the ice cube trays.


  10. You can freeze eggs. Beat one egg and add to ice cube tray. One hole= one egg. Or freeze 2 or 3 eggs at a time to use in cake mixes or when cooking. Beat eggs with a fork and add to a ziploc bag. Label number of eggs in bag. When ready to use place in bowl and unthaw in fridge.


  11. Chop onions in bulk and freeze for taking out a little at a time.

Recipes for Freezer Condiments

Barbecue Sauce
1 Cup water
4 Tablespoons sugar
2 teaspoon salt
1/2 Cup vinegar
2 Tablespoon mustard
1 teaspoon pepper
1 Cup catsup
4 Tablespoons Worcestershire sauce
In medium bowl or jar with a lid, add ingredients and blend together. Fill small freezer containers and freeze. This recipe should make about 2 1/2- 3 cups of sauce, you can freeze in 1 cup increments and double if this is something you use often.

Strawberry Freezer Jam
2 Cups strawberries
7 Cups Sugar
2 pkgs powdered pectin
1 Cup cold water
Wash and hull strawberries. Mash with a potato masher or fork. (great job for young kids). Add sugar and stir until sugar and strawberries are well coated. Set aside. Place cold water in saucepan and add pectin. Over medium heat stir and bring to a boil. Boil 1 minute and take off heat. Stir pectin mixture into mashed fruit. Stir about 4 minutes. Pour into 4 pint containers. Let sit overnight and freeze.

Peach Freezer Jam
3 lbs. peaches
5 cups sugar
Wash, peel and pit peaches. Chop or mash peaches and add sugar. Use the same instructions above replacing the mashed strawberries with mashed peaches. Continue instructions.

Hummus
This recipe is great for dips whether it is for bread or chicken and freezes well.
15 oz. can of garbanzo beans
1 garlic clove, chopped
1 teaspoon salt
1/4 Cup cold water
5 Tablespoons lemon juice
1/3 Cup tahini paste
In blender add beans, garlic clove, salt, cold water, lemon juice and tahini paste. Blend until smooth. Freeze in small containers. Double recipe if desired.

Teriyaki Sauce
1/2 Cup soy sauce
2 Tablespoons Worcestershire sauce
1/2 Cup brown sugar
1/2 Cup water
4 teaspoon ginger
2 garlic cloves, minced
Blend ingredients together and store in small freezer containers. Unthaw and add to stir fry or sweet and sour chicken. Or add this sauce with chicken breasts in a ziploc bag and freeze.
