Freezer Dinner Recipes

Pizza Empandas
1 ½ Cups flour
1 Cup cornmeal
1teaspoon baking powder
¼ teaspoon salt
1 teaspoon sugar
1/3 Cup butter, softened
½ Cup milk
1 Cup pizza sauce
½ Cup shredded cheese
Heat oven to 400. Place dry ingredients and butter in mixer and combine. Slowly add milk until dough forms a ball. If dough is sticky add more cornmeal. Place half of dough on floured surface and roll out until 1/8 inch thick. Cut into 3-4 inch circles. In small bowl, stir together the sauce and cheese. Place 1 tsp. of mixture in every circle . Fold each circle in half and seal with fork along edges. Bake on ungreased baking sheet for 12 minutes. Allow to cool and flash freeze. Place in baggie and store in fridge.

Ham loaf
1 Cup cracker crumbs
2 beaten eggs
1/4 teaspoon pepper
1 1/2 lb. ground ham
1 1/2 lb. ground pork or sausage
Mix together and shape into a loaf. Place in an aluminum foil bread pan or layer tin foil in the bottom of a loaf pan. (leave excess over the edges for pulling out)

Ham glaze
1 cup brown sugar
1 teaspoon mustard
1/4 cup vinegar
1/4 cup water
Pour over ham loaf. Wrap up in tin foil and freeze. When ready to bake, cook at 350 degrees for 2 hours. Let stand before slicing. Or you can shape into meatballs. Flash freeze and add to baggie. Pour ham glaze in the bag and freeze. Cook in a casserole dish.

Spaghetti Pie
6 oz. spaghetti cooked
2 Tablespoons melted butter
1 lb. Mozzarella cheese
2 eggs
½ Cup Parmesan cheese
large jar spaghetti sauce
8 oz. cottage cheese
½  lb. Hamburger
1 teaspoon oregano or Italian seasoning
Cook noodles and toss with mixed butter and egg. Pour into greased baking pan. Brown hamburger and drain. Mix in spaghetti sauce and seasonings.  Top the noodles with the following in order, parmesan cheese, cottage cheese, hamburger, mozzarella cheese and spaghetti sauce. Wrap and freeze or bake at 350 degrees for 25 minutes. Then allow to cool and wrap in tin foil. Freeze. When reheating take from freezer to oven.

Quick Frozen Mini Pizzas
Try making these freezer dinner recipes for easy kids snacks or lunches. Prepare a large batch and flash freeze. They are easy enough that older kids can bake or place in the microwave themselves.

English muffins, bagels, mini bagels, or hard rolls
Pizza sauce, tomato sauce or spaghetti sauce
shredded mozzarella cheese
pizza toppings, such as pepperoni, sliced olives, mushrooms, green peppers, chopped
Place bread of choice (muffins, bagels, etc) on a cookie sheet. Spread sauce over bottom, sprinkle with cheese and top with your topping choices. Flash freeze on cookie sheet. Then place in ziploc freezer bag. When ready to eat bake at 375 degrees until golden brown about 20 minutes.

Tuna Turnovers
2 cans tuna, drained and flaked
1/2 Cup shredded cheddar cheese
1/3 Cup mayonnaise
1/3 Cup chopped pickles
1/8-1/4 teaspoon lemon pepper seasoning
Refrigerated buttermilk biscuits
1 egg, beaten
1 1/4 Cups crushed potato chips
In bowl, combine tuna, cheese, mayo, pickles and seasoning. Flatten biscuit into 5 inch circle. Spoon 2 Tablespoons of tuna mixture onto one side of each circle.  Fold dough over filling. Press edges with a fork to seal.  Place egg and potato chips in separate bowls.  Dip turnovers in egg, then coat with chips.  Place on baking sheet and bake 375 for 18-20 minutes or until golden brown. Allow to cool, then place in freezer bags. They are perfect for lunches so you can freeze 1-2 in a bag and take it out for lunch. Heat in the microwave or oven.

Broccoli Bites
Perfect for a side dish to accompany your freezer dinner recipes.

2 -10 oz. Pkgs. Frozen chopped broccoli, cooked and drained
2 Cups crushed seasoned stuffing
1 Cups grated Parmesan cheese
6 eggs, lightly beaten
½ Cups butter or margarine, softened
½ teaspoon salt
¼ teaspoon pepper
Add all ingredients together and mix well.  Shape into 1 in balls. Place in greased baking pan.  Bake at 350 for 10-12 minutes or until golden brown.  Or place in single layer freezer container and freeze.  To use frozen: Place in greased dish and bake 350 for 15-18 minutes.
