Fried Potatoes and onions in the oven
2 onions
2-3 potatoes
1 Tbsp olive or canola oil
1/2 teaspoon seasoning salt
1/4 teaspoon pepper
1/2 teaspoon garlic salt or powder
Peel and cube onions and potatoes. Place in a large baking dish. Drizzle with oil and season with salt, garlic and pepper. Toss until vegetables are well coated. Bake at 400 degrees stirring every 15-20 minutes until potatoes are tender and browned.
You can add other seasonings as well such as Italian seasoning or parsley.
You can also add other vegetables to the pan such as chopped zucchini (done in the picture above), chopped fresh garlic, parsnips, turnips, etc.
