How to make Pancakes

Easy Buttermilk Pancakes

1 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups buttermilk, at room temperature

3 tablespoons vegetable oil

1 large egg


1. In a large mixing bowl, mix together dry ingredients: flour, sugar, baking powder, baking soda and salt. Set aside.

2. In a medium mixing bowl, whisk the buttermilk, oil and egg. Stir into dry ingredients. The batter should be slightly lumpy.

3. Heat a nonstick griddle over medium heat. Scoop about 1/4 cup of the batter for each pancake on top the griddle, allowing plenty of space for spreading.

Cook until bubbles form on the surface, 2?3 minutes; turn and cook until golden brown, 2 minutes longer. Repeat with remaining batter; serve right away.




Makes 12 - 4 inch pancakes

Apple Pancakes

2 Cups flour
1 pinch salt
10 Tbsp butter cut into small pieces
1/2 Cup light brown sugar
1-2 apples, peeled, cored and grated
4 Tbsp milk

Preheat a heavy skillet or griddle over medium low heat.

Mix the flour and salt together in a mixing bowl.

Rub the butter into the mixture until it resembles fine breadcrumbs.

Add the brown sugar and stir until combined.

Fold in the apple and just enough of the milk, adding a little at time, until the mixture becomes a soft moist dough ball.

Roll the dough out onto a lightly floured surface until it is a 1/4 inch thick.

Use a cookie cutter to cut out rounds in the dough.

Add a little butter to the preheated skillet or griddle.

Cook the cakes for 4 minutes on each side or until golden brown and heated through.

1 packet of oatmeal
small box of raisins
1 egg
milk
cinnamon, if desired

In small bowl, add oatmeal packet, raisins, egg, and enough milk to make it wet enough to mix about an 1/8 of a cup. Pour into greased pan with margarine or butter. Cook like a pancake.
add syrup, ricotta cheese or whatever topping you like.

~If you add too much milk and the batter is too runny, add another oatmeal packet but no more milk.

Easy Spreads for Pancakes

Here are 10 ideas on spreads.

  • Homemade Cinnamon Shaker
    1/2 Cup brown sugar
    1 teaspoon cinnamon
    Mix sugar and cinnamon together and place in a shaker jar or plastic container. This is great sprinkled on homemade oatmeal too.

  • Almond butter
    1 Cup roasted almonds
    Sprinkle of salt, if your almonds are already salted you can omit this
    1 Tablespoon oil
    Run ingredients through a food processor or if you have a heavy duty blender that will work better. If butter is too thick add a little more oil to thin mixture out.


  • Homemade Butter


  • Apple Butter


  • Cheese Filling.
    I love this inside crepes. Stir 1 cup of cottage cheese or ricotta cheese with 1 teaspoon or more to your liking of sugar or honey. Stir until well blended.


  • Puree chopped fresh fruit, no need to add sugar. Or use sliced peaches, sliced pears or fresh berries for a spread or topping.


  • Honey Butter.
    1/2 Cup butter
    1/4 Cup honey
    Add butter and honey to small saucepan and stir together until butter is melted and mixture is well blended. You can also microwave in 30 second intervals.


  • Orange butter
    Try the honey butter recipe above and add 1-2 teaspoons orange juice.


  • Pineapple Sauce
    I found this recipe in the cookbook More with Less. I recommend this cookbook for a lot of made from scratch recipes.
    3 Tablespoons butter, melted
    Stir in 1 Cup crushed pineapple and 2 tablespoons brown sugar. Heat 5 minutes, stirring until clear and thickens. Great on pancakes or waffles.


  • Fruit flavored or plain yogurt topped with granola or chopped nuts. Another favorite of ours in crepes or waffles.

    Puffy Pancakes

    We love having puffy pancakes at our house. We triple the recipe and pour it into a big pan. The kids love to watch it puff in the oven. This is how our latest puffy pancake turned out.

    Pancake with tahini and molasses

    This pancake is very healthy and gives energy. Ýt is different from the ordinary pancakes because there is yeast in it that gives brady taste.

    ingredients:

    Half pack of yeast (20 gr)
    1 tablespoon sugar
    1 glass of warm water
    1 glass of warm milk
    2 glass of flour
    pinch salt
    tahini
    grape molasses
    corn flakes

    instruction:

    Mix the yeast, sugar, milk and the water in a cup. Wait about 10 minutes the yeast to become up bubbly. Add a little salt and flour in. Stir it well. Let stand for 1 one hour at least. You can prepare this at night and keep it in the refrigerator. So it can be ready for the breakfast.

    Oil the pan and cook the pancakes.
    Mix the tahini and molasses, it can be grape one, spread tahini and molasses , put the cornflakes top to get crispy taste. Wrap it well.
