Recipe for Jambalaya
Our
family really thinks this recipe for jambalaya is the best. I love
that it has
vegetables in it and the kids eat it. It makes for a great one pot
dinner recipe and is a super easy jambalaya recipe. If you'd like you
can also add shrimp before simmering.
I've also included an alternative jambalaya recipe that has different
meat and spaghetti noodles instead of rice. Fun and delicious twist on
jambalaya.
Jambalaya Recipe
1 package polish kielbasa or sausage, whatever your
family likes
1 1/2 cups uncooked white rice
1 1/2 cups chicken
broth
1/4 tsp dried thyme
1/4 teaspoon chili
powder
Green pepper or other color, chopped
One carrot,
grated
1 small onion, quartered
1 can chopped tomatoes, undrained
Cut
sausage into slices. In large skillet, cook
sausage flipping over and browning each side. Set aside and wipe out
grease from pan. Add uncooked rice, chicken broth, thyme, chili powder,
chopped pepper, grated carrot, quartered onion and chopped tomatoes
with juice to your skillet. Stir
all together and add sausage back to the pan. Cover with a lid and
simmer on medium about 10-15 minutes until rice is done.

If
you are using brown rice keep in mind the cooking time will be
different as brown rice takes much longer than white rice.
Spaghetti Jambalaya
1 pkg. sweet sausage, cut in chunks
3 chicken breasts, cut in chunks
2 garlic cloves
salt and pepper
1 teaspoon Italian seasoning
In large skillet saute all ingredients above until browned. Take out of
pan and set aside.
Add 1/2-1 pkg. of spaghetti noodles that have been broken in 2 inch
pieces to your skillet. Stir fry noodles until lightly brown.
Add 1 can tomato sauce, 2 bay leaves and 2 Cups water. Water should
just cover noodles. Add your meat back to pan and simmer for 10 minutes
or until noodles are tender and water has evaporated.
