Vegetable Hash Browns

Cheese Hash Browns with Vegetables

2 Tablespoons of canola oil
3 Cups frozen hash browns with onions and peppers
2 Cups pasta sauce with mushrooms
1 Cup frozen peas and carrots
1 Cup frozen corn
1/2 Cup mozzarella cheese, shredded


Pour the oil into a skillet and heat over medium heat.
Stir in the hash browns.
Cook 8 minutes or until almost tender, stirring occasionally.
Pour the pasta sauce over the hash browns.
Add the peas and carrots and corn and stir to blend in well.
Cover the skillet and cook 7 minutes or until the vegetables are cooked through.
Sprinkle the cheese evenly over the top.
Cover the skillet and let stand 1 minute or until the cheese has started to melt.
